Fried Pork Meat and Potatoes With Shellfish

Recipe: Carne de Porco ŕ Alentejana - Fried Pork Meat and Potatoes With Shellfish

We chose this recipe from the many of our rich gastronomy because it is a traditional main dish eaten all over Portugal, but which had its origins in the southern region.

It´s a very pleasant, cheap and easy to cook meal with pork meat and shellfish.

You can find it in any restaurant menu if you travel from the North to the South of Portugal

 

Ingredients: (4 - 6 people)

1 kg pork meat (loin)
75 g mashed red pepper
10 pepper grains
1 bay leaf
2 dl of white wine
2 cloves of garlic
clove
Margarine (a bit)
1,5 dl of olive oil
1 onion
parsley
salt and pepper
500g of potatoes
coriander

Instructions:

Dice the meat and season with the mashed red pepper, salt, a little bit of parsley, one clove of garlic, the bay, the white wine, the pepper grains and the clove.

Let it rest for at least four hours and then fry the diced meat in margarine. When cooked add the ingredients where you had seasoned the meat. Then prepare the clams.

Put the chopped onion, one clove of garlic, 1,5 dl of oliver oil and the two tomatoes mashed and peeled, season with a little bit of pepper and salt and add the clams.

Fry the diced potatoes.

Put the fried pork meat and the fried potatoes in a bowl and add the cooked clams, sprinkle with parsley and coriander.

Note: If you cook fresh clams, wash them carefully with water and salt, so that they are free of all the sand.
