Portuguese Rabbit Stew

We have chosen this recipe because we are tired too see that when someone talks about Portuguese cousine people always associate it to codfish, so, this time we decided to give you someting different, like a rabbit. Ingredients: (4 - 6 people) 1 small rabbit Instructions: Season the rabbit with a bit of salt and pepper and put it in a bowl with the red wine. Next, cut the rabbit into pieces. Heat the olive- oil in a pot and when it is hot enough add the rabbit. Leave it on strong fire for 10 to 15 minutes, turning the pieces of the rabbit so that they roast equally. Reduce the heat and add the white wine, the pricked tomatoes without skin and without pipes, chop the onion, the garlic and the parsley, season with salt and pepper. Cover the pot and let it cook for one hour in mild fire. Taste it and rectify the seasonings. Put the rabbit with mashed potatoes or boiled potatoes, fried sliced bread and boiled cabbage on a large plate.
